Dimtu Coffee Washing Station, operated by Nardos Coffee, is one of the most modern and technologically advanced dry processing plants in Yirgacheffe. The plant features Pinhalense machinery, 150 drying beds, a shaded experimental area, accommodation for seasonal workers, and a modern cottage for management and visitors.

In three generations, the Biniyam’s family has pulled off this major undertaking; leaving an indelible mark on the history of Ethiopian coffee. For them there are no shortcuts to improve the quality of the coffee.

Natural processing method involves a rigorous quality control process from the moment the beans are collected from farmers.

The beans are then taken directly to raised beds, where they dry for 22 to 25 days due to weather and soil conditions, making nearly Anaerobic like profile without being to over fermented.
To ensure optimal moisture content, the beans are covered when they reach around 15-20% moisture content and are stirred four times a day to remove any unwanted cherries.

Once the beans reach 11.5% moisture content, they are carefully stored in our warehouse, where they await milling and transportation directly for further processing to meet export standards.
