The Nogales group is a family-owned company that is part of a project encompassing three farms—Los Nogales, Finca Nahui, and Finca Neblina—specializing in exotic coffee varieties. Inspired by their experience in Panama, they adopted advanced drying techniques with precise temperature and humidity control, in addition to employing a fertilization strategy with microorganisms and minerals that optimizes soil health and cup quality.
Their philosophy combines terroir, genetics, and science, classifying their coffees into three categories: Grand Reserve, Equilibrium, and Alchemy.

Coffee pickers selectively harvest only ripe cherries, which are then cleaned and disinfected with treated water to remove defects and ensure quality selection.

The cherries are pasteurized in water at 90°C for 60 seconds to enhance fermentation sugars, then dry-pulped with a modified machine to preserve all coffee juice for fermentation.

Fermentation lasts 7 days in the coffee’s own sugars, along with a ratio of 1 part pre-fermented coffee yeast to 4 parts of this juice. These pre-fermented yeasts—microorganisms recovered from the coffee mosto, clarified, and preserved with beans of the same variety—contribute to a high-quality fermentation while preserving the terroir.

Finally, the coffee is dried on raised beds under controlled temperature and humidity until reaching the ideal moisture level for storage and export.
