About This Coffee
We are featuring Rubi as our first seasonal green label. A pretty special micro lot of natural Red bourbon from El Vergel Estate farm located in Fresno, Tolima.
This is one of the outstanding coffees produced on the farm. Ripe coffee cherries undergo a 60-hour phase of anaerobic fermentation, before being intermittently dried in the sun for a total of 35 days. Subsequently, the grains are mechanically pulped and stored for 2 months in grain-pro bags for optimal maturation and future export.

This farm Located in Fresno, Tolima (the beautiful department that stretches over the Colombian mountains and has rich soils to grow), under the leadership of Elias and Shady Bayter has been producing a variety of single origin coffees and experimenting with new and innovative processing techniques for coffee roasters around the world.
